The Best Pumpkin Cookies

Ingredients

  • Recipe adapted from Nestle
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp pumpkin spice
  • 1/4 tsp salt
  • 1/2 cups granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup softened butter
  • 1/2 cup Pumpkin puree not pumpkin pie filling
  • 1 large egg
  • 1/2 tsp vanilla extract
  • Glaze:
  • 1 cup powdered sugar
  • 2 tbsps heavy cream
  • 1 tsp Pumpkin puree

Instructions

  • Preheat the oven at 350 degrees.
  • Step 1: Mix the flour, cinnamon, nutmeg, pumpkin spice, baking soda, baking powder and salt together in a mixing bowl.
  • Step 2: Mix the brown sugar and the granulated sugar with the butter until light and fluffy. Then add egg, pumpkin puree and vanilla together.
  • Step 3: Add the dry ingredients mixture to the pumpkin mixture. Be careful not to over mix.
  • Step 4: Line a cookie sheet with wax paper or parchment paper and using a cookie scoop space each pumpkin cookie evenly. Make sure they are not too close or they will stick together.
  • Step 5: Bake for 12-15 minutes or until the pumpkin cookies are brown around the edge and the bottom.
