At the beginning of the year, I had some oranges that were sour and needed to use them.  So, I decided to make homemade jam. I know winter is not your typical jam season, but I never get tired of making jam.  Jam is not just for toast, I like to use it to add flavor to buttercream and cake/cupcake recipes.  Remember those orange cupcakes? I used the jam to make the buttercream. What is the Difference Between Orange Jam and Orange Marmalade? The difference between orange jam and orange marmalade is: marmalade is made with the whole orange, the rind, and a lot of sugar.  While orange jam eliminates the rind, and pith and uses less sugar. They are prepared the same way, with the exception of marmalade where water is used in the recipe. What you need to make this recipe: Oranges- about 5 medium peeled oranges with pith, rind, and membrane removed. Lemons- you will need the juice of two medium lemons. Sugar- I used only 2 cups of sugar, I like my jam to be less sweet. Saucepan Mason jar &#8211;I like to use BPA free canning jars such as Ball, double-check the brand to make sure. Nutribullet or Blender Steps for Making Orange Jam Peel the oranges and remove the rind, pith (the white area), and the membrane. The pith is bitter so I chose to remove it, however, this area is filled with pectin.  Place the oranges in a Nutribullet or blender and pulse.  Pour into a medium saucepan. Add the sugar, lemon juice, and mix together until combined. Then cook for 20-25 minutes until the jam sets.  Remember to stir frequently. Allow the jam to cool then add to a mason jar.  If you can wait add to a piece of toast and enjoy. A few Things to Consider when making Pineapple Jam Sugar: Usually, when making jam you add more sugar, which is fine for toast.  However, in this case, pineapple is naturally sweet, therefore, I reduced the sugar.  But, if you like your jam on the sweeter side, simply increase the sugar to one cup.  I don&#8217;t suggest going above one cup.  Chunks of pineapple.  Full disclosure, there will be some chunks in your jam if you use it straight from the can.  If you don&#8217;t like pineapple chunks in your jam, then pulse it some more in the blender, Nutribullet (which I love), or food processor. Additional flavors: Another thing to consider is whether or not to add additional flavors such as lemon juice or spices. Of course, this changes it from two-ingredient jam to three/four depending on what you add.  But, the flavor is entirely up to you, pineapple has a light flavor and that is why I chose to leave out the spices. I wanted the taste of pineapple in the cake and the buttercream.  A hint of cinnamon is also great. On the other hand, lemon juice is a great addition, it brings a nice tang to the already sweet jam.  It also has pectin and since pineapples have very little pectin (pectin is used as a thickener). How to make Pineapple Jam Pineapple jam is very versatile, it can be added into cake batters, used as a cake filling and also in buttercream.  When adding to the buttercream, add a small amount at a time until it is to your liking.  If you are going to pipe the buttercream remember to pulse the chunks or it will become stuck in your piping tip. Step 1: Add the crushed pineapple to a saucepan Step 2: Add granulated sugar and mix it together.  You may also add lemon juice or cinnamon based on your preference. Turn the heat to medium-low and cook for 18-20 minutes or until the jam has thickened up. That&#8217;s it, easy peasy right? Don&#8217;t forget to save for later and share. As always happy caking. I decided right then and there I was going to make peach jam, peach cupcakes, and if I had enough left over a peach cake.  This peach jam is super easy to make, and only uses three ingredients. I know that sounds like a lot, but I was in the groove. So I went with it. As soon we walked in the door, I started cutting them up, and they were so beautiful inside. Jam makes such a difference in the cakes. It can be used as a filling or to make a particular flavor cake. Even though my vanilla recipe is delicious, sometimes it needs a friend. To make peach jam, you need only three ingredients: peach, sugar, and fresh lemon juice. You may choose to crush the peaches in the beginning or at the end. I prefer the chunks in my jam because you get a small piece of peach in every bite. Seriously, I am salivating writing this post because it&#8217;s so good. The next step is to cook it down until it starts to have the bubbles on top. Steps for making peach jam Remove the skin and seed from the peaches; you can peel them or blanch the skin off using hot water. Cut the peaches into small chunks. You may crush them as well, but that&#8217;s optional. Add the sugar. Then add the lemon juice Cook for about 10 to 15 minutes on medium heat.  Crush the peaches or place them in a food processor or the Nutribullet.  I like to leave some chunks in my peach jam. Delicious and easy peach jam made with fresh peaches, with no pectin added. That&#8217;s how to make an easy homemade peach jam.  Add to cake as a filling or make a peach cake or peach cupcake. Store in an airtight container in the refrigerator for up to two weeks.  Need it longer, add it to a freezer-safe bag and store it in the freezer for up to a month. 					<description><![CDATA[<p>Blueberries are one of those superfoods that does not get much love. The health benefit goes without saying. It is one of the best berries for you. Hence one of the main reasons I love blueberries. Plus, it is my excuse for adding them to recipes, smoothies, and yogurt every chance I get.  I had some frozen blueberries at home and decided to use some to make blueberry jam.  That was the best decision ever. I love adding jams (see strawberry jam) to buttercream recipes (strawberry buttercream). It takes the buttercream from great to awesome. We love our buttercream around here. How to make blueberry Jam The thing that&#8217;s unique about blueberries is the seeds are really not that noticeable like strawberries. You can strain if you like, but I don&#8217;t think it&#8217;s necessary. When making blueberry jam I try to keep it simple. For me, that means blueberries, sugar, lemon juice and corn starch which is totally optional. I do not add pectin the lemon juice gives enough. Plus, I like to keep everything I make as natural as possible. However, if you are using it as a filling then you might have to strain the tiny seeds. The seeds are really small though. Strain them using a cheesecloth. This time I added the jam to my lemon blueberry buttercream that was paired with lemon blueberry cupcakes #yum. that So how do you make blueberry jam? Materials Blueberries (frozen or fresh) Lemon (medium) Saucepan Sugar Corn starch Nutribullet Mason Jar Steps Measure 2 cups blueberries and add to a saucepan Add the sugar Then add the lemon juice and turn the stove to medium high Cook until it starts to bubble and thickens Check to see if it is thick enough. If it isn&#8217;t, add about a teaspoon of cornstarch. I added the entire thing to the Nutribullet and gave it a few pulses and the result is a delicious and smooth blueberry jam. This easy blueberry jam recipe needs only a few ingredients. All natural no pectin added.</p>

					<description><![CDATA[<p>It&#8217;s strawberry season and I couldn&#8217;t resist the beautiful strawberries I saw this weekend.  One they were on sale (win) and two they had such a beautiful red color.  As I stood in the store salivating, I decided to make some strawberry jam to jazz up my Italian Meringue Buttercream.  It was super easy to make and is my go-to recipe for cake fillings. After making homemade Strawberry Jam I could not go back to store-bought Jam. Not only is it is delicious, but it is also one hundred percent natural.  It contains no high fructose corn syrup or commercial fruit pectin. I used lemon juice to replace the commercial pectin.  Lemon juice is loaded with a natural pectin which is used to thicken up the jam.  You can never go wrong with homemade. How to Make Strawberry Jam To make strawberry Jam you only need three ingredients strawberries, sugar, and lemon juice.  These three ingredients when cooked for a few minutes become delicious jam that you can eat all day.  Are you ready to make strawberry jam? Ok, let&#8217;s go&#8230; Ingredients: 1 Pint Strawberries 1/2 cup sugar 1/2 to 1 medium lemon 1 tsp cornstarch (optional) Mason Jar Nutribullet Remove the hull The hull of the strawberry is the green leafy top of the strawberry.  Using a knife remove the hull from the top of the strawberry.  No need to cut the strawberries. Add to Food Processor Add the strawberries to the food processor and pulse. After a few pulses, the strawberries should look like this. Cook the Strawberries Add the strawberries to a saucepan, then add the lemon juice and sugar. Mix the sugar with the strawberries and turn on the stove to medium-high. Stir constantly to avoid the jam from sticking to the pot. Cook for about 8 to 9 minutes or until you can see the froth on top.  To thicken add some cornstarch.  This is optional.  Place into a mason jar to cool.  Wait until the strawberry jam is completely cooled before closing the jar and placing it into the refrigerator.  For regular Strawberry Jam, you can stop here.  However, since I am making this for my upcoming post-Strawberry Italian Meringue Buttercream, I like to remove the seeds.  So, I pureed it in the Nutribullet.  Then, using a small strainer, strained the Strawberry Jam to remove the seeds.
